Equipment

  • Large Skillet
  • Tongs
  • mixing bowls
  • whisk
  • Paper towels
  • Plate lined with paper towels

Ingredients

  • 2 medium zucchinis
  • 1/2 cup rice flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs or 1/2 cup almond milk for vegan
  • 1 cup panko breadcrumbs or gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese optional, omit for vegan
  • Olive oil or vegetable oil for frying

Instructions

Prepare the Zucchini:

  • Cut the zucchinis into fry-like strips. First, cut off the ends, then slice the zucchini in half lengthwise. Cut each half into quarters to create fry shapes.

Set Up Breading Stations:

  • In one bowl, combine the rice flour, garlic powder, onion powder, paprika, salt, and black pepper.
  • In a second bowl, whisk the eggs (or pour almond milk for vegan).
  • In a third bowl, mix the panko breadcrumbs and Parmesan cheese (if using).

Bread the Zucchini Fries:

  • Dredge each zucchini strip in the rice flour mixture, shaking off any excess.
  • Dip the floured zucchini into the egg (or almond milk) to coat.
  • Roll the zucchini in the breadcrumb mixture, pressing lightly to adhere the breadcrumbs to the zucchini.

Heat the Oil:

  • Heat a generous amount of olive oil or vegetable oil in a large skillet over medium-high heat. The oil should be about 1/4 inch deep.

Pan-Fry the Zucchini Fries:

  • Carefully add the breaded zucchini fries to the hot oil in batches, being careful not to overcrowd the skillet. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.
  • Use tongs to transfer the fried zucchini fries to a plate lined with paper towels to drain excess oil.

Serve:

  • Serve the zucchini fries hot with your favorite dipping sauce, such as marinara, ranch, or a garlic aioli.
