Gluten Free Double Chocolate-Chocolate Chip Walnut Muffins

Ingredients
  

  • 1 1/2 cups gluten-free all-purpose flour (Make sure it's 1:1 flour)
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk dairy or non-dairy
  • 1/2 cup chopped walnuts
  • 1/2 cup gluten-free chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  • In a large mixing bowl, whisk together the gluten-free flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  • In another bowl, beat together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Be careful not to overmix.
  • Gently fold in the chopped walnuts and chocolate chips until evenly distributed throughout the batter.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
