Ingredients
  

  • 2 lbs pork belly skin on
  • 2 cups water or chicken broth
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/4 cup BBQ sauce plus more for basting
  • Additional seasoning for grilling salt, pepper, smoked paprika

Instructions
 

Pressure Cook the Pork Belly:

  • Place the pork belly in the pressure cooker. Add water or chicken broth, garlic powder, onion powder, smoked paprika, black pepper, and salt.
  • Secure the lid and pressure cook on high for 20 minutes. Allow the pressure to naturally release for 10 minutes, then manually release any remaining pressure.

Prepare for Grilling:

  • Remove the pork belly from the pressure cooker and pat it dry with paper towels to help achieve a good sear on the grill.
  • Brush the pork belly with BBQ sauce and sprinkle with additional seasoning (salt, pepper, smoked paprika) to boost the flavor.

Grill the Pork Belly:

  • Preheat your grill to medium-high heat.
  • Place the pork belly on the grill and cook for 5-7 minutes per side, or until you get a nice char and the BBQ sauce has caramelized. Baste with more BBQ sauce as needed.

Rest and Serve:

  • Remove the pork belly from the grill and let it rest for 5 minutes before slicing into bite-sized pieces or strips.
  • Serve with additional BBQ sauce on the side.
