Ingredients
  

For the Chicken:

  • 4-5 large chicken breasts sliced thin and pounded lightly (to make 8-9 cutlets)
  • 1 tablespoon olive oil for drizzling

For the Filling:

  • 1 8 oz package cream cheese, softened
  • ¾ cup cottage cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 ¼ cups shredded broccoli
  • 1 cup finely chopped mushrooms
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 2 teaspoons Italian seasoning

For Assembly:

  • 8-9 asparagus stalks trimmed

Instructions
 

Prepare the Chicken:

  • Slice each chicken breast into two thin cutlets and pound lightly to even thickness.

Make the Filling:

  • In a bowl, mix the cream cheese, cottage cheese, mozzarella, shredded broccoli, mushrooms, salt, garlic powder, onion powder, paprika, and Italian seasoning until well combined.

Assemble the Rollatini:

  • Drizzle olive oil onto a baking sheet.
  • Lay out the chicken cutlets and spread a generous layer of the seasoned cheese filling onto each.
  • Place one asparagus stalk at the edge of each cutlet and roll it over loosely (not too tight).
  • Place the rollatini seam-side down on the oiled baking sheet.
  • Spoon a little extra filling on top of each rollatini—this will melt into a rich, cheesy sauce while baking.

Bake the Rollatini:

  • Preheat oven to 375°F (190°C).
  • Bake uncovered for 30-35 minutes, or until the chicken is fully cooked and the cheese is bubbly and slightly golden.

Serve & Enjoy:

  • Spoon some of the oozing cheesy sauce from the baking sheet over the rollatini when serving.
