Ingredients
  

  • 1 large head of cauliflower cut into florets
  • 4 oz cream cheese softened
  • 1/4 cup unsalted butter melted
  • 1/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tablespoons sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh chives or parsley chopped (optional, for garnish)

Instructions
 

Steam the Cauliflower:

  • Place the cauliflower florets in a large pot with about 1 inch of water. Bring to a boil, cover, and steam for about 10 minutes, or until the cauliflower is very tender. Drain well.

Sauté Garlic:

  • In a small pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

Blend the Cauliflower:

  • Transfer the steamed cauliflower to a food processor or blender. Add the sautéed garlic, cream cheese, butter, heavy cream, Parmesan cheese, and sour cream. Blend until smooth and creamy.

Season

  • Season the mashed cauliflower with salt and pepper to taste. Blend again if needed to combine.
