Fluffy Vegan Pancakes

Deliciously satisfying fluffy gluten-free vegan pancakes that won't leave you craving anything else. Not only is this gluten-free it's also guilt-free.

Equipment

  • 1 mixing bowl
  • 1 whisk
  • measuring cup (from a set)
  • measuring spoon (from a set)
  • 1 spatula (or spoon)
  • 1 nonstick pan or griddle
  • 1 cooking spray

Ingredients
  

  • 1 cup gluten-free all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup almond milk (or any plant-based milk)
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Instructions
 

  • In a mixing bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
  • In a separate bowl, combine almond milk, vegetable oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; a few lumps are okay.
  • Let the batter rest for 5 minutes to allow it to thicken.
  • Heat a non-stick pan or griddle over medium heat.
  • Pour 1/4 cup of batter onto the pan for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  • Repeat with the remaining batter.
  • Serve your delicious vegan gluten-free pancakes with your favorite toppings – maple syrup, fresh fruit, or dairy-free whipped cream.
