Instructions
In a mixing bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
In a separate bowl, combine almond milk, vegetable oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; a few lumps are okay.
Let the batter rest for 5 minutes to allow it to thicken.
Heat a non-stick pan or griddle over medium heat.
Pour 1/4 cup of batter onto the pan for each pancake.
Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
Repeat with the remaining batter.
Serve your delicious vegan gluten-free pancakes with your favorite toppings – maple syrup, fresh fruit, or dairy-free whipped cream.
