  • Tongs (for browning meat)
  • Ladle (for serving)

Ingredients

  • 2 lbs goat meat cut into chunks
  • 2 tablespoons vegetable oil
  • 2 large onions chopped
  • 4 cloves garlic minced
  • 2 large tomatoes chopped
  • 2 tablespoons tomato paste
  • 4 carrots sliced
  • 4 potatoes peeled and cut into chunks
  • 2 cups beef or chicken broth
  • 1 cup coconut milk
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • 1 teaspoon ground coriander
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

Marinate the Goat Meat (Optional):

  • If you have time, marinate the goat meat with some salt, pepper, and a bit of oil for a couple of hours or overnight.

Brown the Meat:

  • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  • Add the goat meat and brown it on all sides. Remove the meat from the pot and set aside.

Cook the Aromatics:

  • In the same pot, add the chopped onions and cook until they are soft and translucent.
  • Add the minced garlic and cook for another 1-2 minutes until fragrant.

Add Tomatoes and Tomato Paste:

  • Add the chopped tomatoes and tomato paste to the pot. Stir and cook for about 5 minutes until the tomatoes start to break down.

Combine Ingredients:

  • Return the browned goat meat to the pot. Stir to combine with the tomato mixture.
  • Add the sliced carrots and potatoes to the pot.

Season and Add Liquids:

  • Sprinkle the thyme, paprika, curry powder, and ground coriander over the meat and vegetables. Stir to coat everything evenly with the spices.
  • Pour in the beef or chicken broth and coconut milk. Add the bay leaves. Season with salt and pepper to taste.

Simmer the Stew:

  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 1.5 to 2 hours, or until the goat meat is tender and the vegetables are cooked through. Stir occasionally and check the liquid level; add more broth if needed.

Finish and Serve:

  • Once the stew is ready, taste and adjust the seasoning if necessary.
  • Remove the bay leaves before serving.
  • Garnish with fresh cilantro or parsley.
